Gault&Millau rewards Tomorrowland's best dishes for the 10th time
The gastronomic guide awarded several prizes to the food stands who put in the best performance
Thursday, 1 August 2024 - Gault&Millau was present at Tomorrowland this year for the 10th time to inspect the 'festival food' and 'food concepts' on offer. During the event, the gastronomic guide awarded several prizes to the food stands who put in the best performance. A production orchestrated by a team of inspectors on hand over the two weekends of the 20th edition of Tomorrowland.
From over 100 food stands serving up more than 300 dishes, a handful of winners were selected in five categories:
1) Gault&Millau Best Festival Food - Street food
The dish that received the highest marks from the various inspectors and also impressed in the final.
Chicken thigh skewers – Chef Pam
Tomorrowland hit the right note again this year by bringing a great deal of variety and creativity to the range of food on offer. This is particularly true of Mesa Garden, where the combination of national and international chefs is a marriage made in heaven. This is the first time our country has attracted Lady Chef Pam, the youngest Thai chef to have been awarded the title of 'Asia's Best Female Chef from World 50 Best Restaurants'. From New York to Bangkok, Pam is hailed as the culinary pioneer of the moment. Her chicken satay embodied the perfect integration of street food in our culinary landscape, thanks to the tasty chicken thigh meat that was cooked to perfection. Deliciously juicy, its seasoning, along with the sweet-and-sour touch injected by the tamarind, made for a fine overall balance. The crunchy parts of cucumber added an extra hint of freshness.
2) Gault&Millau Best Burger or Bun
There was no missing the diversity of burgers and buns on offer at the festival. Both at DreamVille and at the festival itself, the organisation clearly outdid itself by offering burgers that rivalled each other for creativity and variety. A whole array of crispy buns and brioche buns, as well as several vegetarian options and different types of meat, meant there was something for every taste. Whether soy, fish, chicken, beef and pork.
Vegetarian Tomorrowland Burger – We Are One World
It wasn't just about serving up a perfect burger just once, but about achieving consistently superior quality every time during the various tastings. Right next to the Freedom stage, they proved that they could whip up a tasty burger for each of the inspections. A tender bun, lightly warmed, was emblazoned with the Tomorrowland logo. The burger itself, made from soy, was well seasoned and a more than worthy alternative to meat. Melting cheddar, red onion and a sprinkling of pickles gave the fresh salad a bit of a kick. Finished off with the secret 'Tomorrowland' sauce, this burger hit the spot every day!
3) Gault&Millau Best Festival Food - Gastronomic
The most gourmet dish of the festival, in terms of presentation, refinement and flavour.
Grilled sea bream – BBQBros
Those visiting Mesa Garden this year couldn't escape Lebanon's BBQBros. Barbecue-style dishes were some of the stars of the show thanks to several Ofyr barbecues that were used to prepare choice dishes such as Lebanese Kafta, Grilled Cauliflower or even Duck Breast, cooked to taste. A fine variation on meat, vegetarian and fish dishes, with the inspectors awarding the highest gastronomic score to the dish featuring sea bream. The fillet was cooked on the Ofyr and served with a crisp cucumber salad, crispy chili, herb salsa, perfectly seasoned baked potatoes, a walnut crumble and lashings of fresh herbs.

The most accomplished vegetarian dish according to the Gault&Millau inspectors.
Indian curry, butter paneer – Mission Massala
The range of vegan and vegetarian dishes on offer continues to grow every year. But an increasing number of non-vegetarians are also enjoying these tasty substitutes. Mission Massala has added a vegetarian alternative to butter chicken, alongside the original dish. By replacing the chicken with paneer - a tangy fresh cheese made from whole buffalo or cow's milk, commonly used in India - you get a perfect vegetarian option that is even spicier when lightly grilled. Made with perfectly cooked rice, a creamy tomato sauce and a choice of mango chutney or spicy sauce, this dish also scored well in terms of value for money.

The most accomplished and surprising dish at DreamVille - Tomorrowland.
Croissita – Bokertov
Breakfast, brunch and lunch make up a significant share of the daily meals at DreamVille, and rub shoulders according to everyone's schedule. At DreamVille, we were once again pleasantly surprised by an impressive diversity of exciting new caterers. But familiar concepts are also innovating, as demonstrated by Bokertov's Croissita. A bun-shaped croissant with oodles of butter, an egg and a little cheddar, topped with spiced honey for a sweet touch. Ideal as a lunchtime breakfast for 'DreamVille people'... We simply call it a perfect start to the day!
